Seasoned Rice

Serves 6-8

Method: 
Put the onion, garlic, and cold water into a blender and process until smooth.
Heat oil in a dutch oven; add rice and cook, stirring, until browned and toasty and the rice begins to crackle, 7 - 10 minutes. Add the onion mixture to the rice and cook, stirring, for one minute. Add the hot water, lime juice, parsley, and salt; cook until it sommers, the reduce heat to medium-low, cover, and cook for 15 minutes without lifting the lid. Remove from heat and allow to sit, undisturbed, for 10 minutes.
Discard the parsley, fluff with a fork, and serve at once.
