I stole a great Turkey and
I stole a great Turkey and Sausage Gumbo recipe from someplace and make it every year, after Thanksgiving. I make the stock from the carcass(es) on Friday, the Gumbo on Saturday, and on Sunday take containers to my Aunt and Uncle, who don't get out well, anymore. I thought I had stolen it from you but maybe not. ::shrug:: I always give attribution until I alter the recipe sufficiently to make it my own.

I was about to say, "Ever heard of Turkey Gumbo?". This fabulous dish, or pot, has become a tradition at our house for years now. At lease 8 people always come back to the table Friday evening. This Thanksgiving Friday it was served up after the LSU football game. Seems like our guests worked up quite an appitite with all that shouting at the TV all afternoon! Serve it with just a salad and sides aren't necessary. The delicious delight is a MEAL IN ITSELF.
Whenever I have a turkey
Whenever I have a turkey carcass, I want gumbo. So I start by roasting it in the oven with garlic, carrots, celery, onions....roughly chopped...for 1-2 hours...Then, I use all of that to make the stock. So I add 4 quarts of water and season it...salt, pepper, thyme, rosemary...and I put it in a crock pot and let it cook for at least 24 hours...sometimes 36 hours...and then I make the gumbo...turkey, andouille, shrimp and crab fingers...you know what to do!
I made turkey and dumplings
I made turkey and dumplings with carrots and peas. Everybody went back for a second helping. Just substitute turkey for chicken.
