Dr. Fox's Char-Grilled Oysters

Makes 24

Ingredients: 
For the Compound Butter:
  • 3 sticks butter, softened
  • 6 garlic cloves, minced
  • juice and zest of 2 lemons
  • 4 tablespoons minced green onions
  • 2 teaspoons red chile flakes
  • salt and freshly ground pepper 


For the Oysters:

  • 24 raw oysters on the half shell
  • 1 1/4 cups shredded Parmesan cheese
  • lemon wedges and French bread for serving, optional

Char Grilled Oysters 

Method: 

For the Compound Butter:
Combine all ingredients thoroughly. Scoop butter on to a length of plastic wrap and roll to form a log. Refrigerate until solid.

For the Oysters:
Place 1 tablespoon butter atop each oyster and place on grill. Cook until liquid bubbles, about 4 minutes. Add 1 tablespoon Parmesean cheese and cook until cheese melts and browns and edges of oysters curl, about 3 minutes.

Serve with lemon wedges and French bread.
