Crawfish Au Gratin

Serves 4

Ingredients: 
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 2 ribs celery, chopped
  • 4 tablespoons butter, melted
  • ¼ cup sliced green onions
  • ¼ cup diced roasted red peppers
  • 1 tablespoon flour
  • 4 ounces Cheddar cheese, grated
  • 1 5.33 ounce can evaporated milk
  • 1 pound crawfish tails
  • Salt and pepper to taste

Method: 

Preheat oven to 350ºF.

Sauté onion, garlic, and celery in butter until tender. Add green onions and red pepper the last 10 minutes. Mix in flour; add cheese, milk, salt, and pepper, then fold in crawfish. Transfer to a greased casserole and bake for 15 minutes; sprinkle cheese over top and bake until cheese has melted and begins to brown, 15 to 20 more minutes.
