Brabant Potatoes

Heat oil to 350°F in a large pot or deep fryer.
While waiting for the oil to get hot, peel the potatoes and cut them into 1/2” squares. Add the potatoes and fry for 8 to 10 minutes until golden brown and tender. Use a slotted spoon to remove the potatoes from the oil to a platter lined with paper towels.
Place the fried potatoes in a large mixing bowl and add the butter, garlic, parsley, salt, and pepper. Toss until the potatoes are evenly coated.
Serve while still hot.
