Spicy Creole Potato Salad

Serves about 10

Ingredients: 
  • 3 pounds red or Yukon gold potatoes
  • 8 hard boiled eggs, chopped
  • 2 ribs celery, chopped fine
  • 2 large onions, chopped fine
  • 1 bunch green onions, chopped fine
  • McIlhenny's Spicy Mayonaise, to taste
  • Tony Chachere's seasoning, to taste

Method: 

Gather potatoes (cut in small pieces and boiled until soft), eggs, onion, celery and green onion in a very large bowl and mix until thoroughly combined.
Add enough mayonnaise to achieve a creamy texture. Add Tony's seasoning to taste.
Serve warm or cold.
