Congratulations to Betsy M. of Gulfport, MS -- her name was the first drawn for the weekend at the Hotel Monteleone and tickets to NOWFE over Memorial Day Weekend. The contest drew 2,213 entries from 45 states, the District of Columbia, the Canadian provinces of Alberta, British Columbia, Manitoba, and Ontario, and from France and Honduras! Thanks to all who participated. We're beginning to see the first of the summer vegetables at the farmers markets and produce stands -- my favorite time of the year. My dad planted a big garden each year and, as much as we hated the upkeep, picking, cleaning, and putting it all up, we surely did enjoy eating it. A couple of the recipes I've included below call for the early produce- green tomatoes, corn, and ripe tomatoes. I'm looking forward to my first Creole tomato; once they're in season, I'll eat them every day, sometimes at breakfast, lunch, and dinner. Reminder: Mother's Day is May 10, this Sunday. Gulf Fish Beignets with Tomato-Corn Tartar Sauce This recipe is adapted from an Emeril Lagasse cookbook and is three-in-one. The overall recipe, plus a great tartar sauce, plus Emeril's Creole seasoning mix. This will be a summer favorite. |

Shrimp and Scallops Fettuccini with Feta Shrimp and scallops are sautéd until just done; add a little garlic then deglaze the pan with wine. Add the tomatoes, some lemon, and finish with red pepper flakes and feta. Easy, and delicious. |

Fried Green Tomatoes This simple recipe is a summer favorite, and is great alongside any grilled meat. Use them as a base for Eggs Benedict, serve your favorite étouffée over the top, with a tartar sauce, or just eat them hot out of the pan. For a little extra flavor, fry off a few strips of bacon, then cook them in the bacon grease. These will be on your table all summer. |
