Cocodrie, LA is up for the World Fishing Network's Ultimate Fishing Town. Last year we voted them into 5th place; this year we want them to win. After all, is there any better fishing than that to be found in South Louisiana? We need you to go vote (early and often!) to keep our fishing mecca in the running; you have to register once via email, but when that's finished you can vote directly on the site up to 4 times a day. The top town takes home $25,000 to use to market itself as a destination and would be a boon to the area. Bonus points for referring friends and posting to Facebook and Twitter. You have two weeks left to enter to win deluxe accommodations at the Hotel Monteleone in the heart of New Orleans' French Quart, along with tickets to the Royal Street Stroll and Friday night Grand Tastings, both part of the http://www.nowfe.com/New Orleans Wine and Food Experience . We'd love it if you subscribe to the magazine while you're entering, but no purchase is necessary to win. Our May/June issue came off press last night, officially beginning our second year of publishing. I think champagne is in order. Or a facelift- launching a magazine isn't for the faint of heart. We finished off our first year with subscribers in all 50 states, Puerto Rico, and DC, plus several foreign countries. Louisiana's unique culinary culture and heritage truly is world-renowned. We surveyed our print subscribers earlier this month, and were gratified to learn that 98% of them absolutely love the magazine. Stories on our food culture are the most popular, followed closely by recipes from professional chefs; the photograply; and the history behind Louisiana's culinary heritage. The favorite department is On Our Plate: Fresh, Seasonal Ingredients, followed by Weenight: Fast, Easy Recipes; and Weekend, with more complex recipes and full menus. What they like least about the magazine is the fact that it's only published six times a year; my favorite quote is "Thanks from the bottom of my stomach!". If you're not a subscriber to our print magazine, you're missing out. Our collector's bundle includes all four issues of 2012, plus all of 2013, for just $45. Or, select a 1-year subscription starting now for just $25. Enjoy this week's recipes, share them with family and friends, and, as always, let us know what's on your mind.

Gattuso's Fried Oyster Club SandwichThis is a Louisiana twist on a classic club sandwich. Fry off some oysters to use in place of the more traditional sliced turkey, and mix equal parts mayonnaise and Creole mustard for the spread. Serve hot, so the cheese melts! Gattuso's Neighborhood Restaurant + Bar is part of the Louisiana Oyster Trail |
Crawfish and Corn Macque ChouxI chose this recipe in honor of beginning our second year of publishing; it appeared in the Premiere issue of the magazine. Macque choux is a mix of French and Native American flavors, and always has corn, tomatoes, onions, and bell peppers. If it's to be served as an entree, add chicken, shrimp, or, as we do here, crawfish. And of course, butter and cream! As shown, it's served over fried eggplant. |
Shrimp Ravioli in Andouille BrothExcerpted from Southern Comfort. Don't be intimidated at the idea of making ravioli- this recipes calls for wonton skins, and the filling is simple. The broth is simple, also, but the flavors are anything but. Per the recipe introduction, "the depth of flavor of the andouille and soy broth will beguile your audience into thinkig you spent all day in the kitchen." |
