On Monday, December 17 at 6 p.m. Chef Dominique Macquet will host a benefit dinner for his Sous Chef and protégée, Chef Quan Tran, who has been battling stomach cancer since March. The two have worked together for years, most recently at Tamarind by Dominique, the former French-Vietnamese restaurant in the Hotel Moderne. A devoted father of three, Chef Tran has been out of the kitchen for months as he undergoes treatment. To further complicate matters, his health insurance will end on December 1. The benefit will take place at Le Foret, 129 Camp Street, featuring cuisine and libations from some of New Orleans' top chefs and bartenders including Rene Bajeux of Rene Bistrot, Brian Landry of Borgne, Abigail Gullo of SoBou, Matt Murphy of Irish House, and Tory McPhail of Commander's Palace. In accordance with the holiday season people are being asked to play Santa for Chef Tran's three children. Those wishing to donate gifts should contact Chef Dominique via Facebook or Elizabeth Porter at elizabeth.m.porter@gmail.com. Tickets to the benefit are $125 per person. For details call 504.553.6738. I am headed down to Buras this weekend for the 66th annual Plaquemines Parish Fair & Orange Festival. They are going on with their festival despite the devastation they suffered due to Hurricane Isaac, which came just 2 years after they fully recovered from the devastation wrought upon them by Hurricane Katrina. The festival opens Friday at beautiful, historic Fort Jackson and runs through Sunday. In addition to plenty of delicious, fresh Louisiana citrus options, the festival always has plenty of raw and char-grilled oysters on hand. Enjoy this week's recipes, and let us know what's on your mind. Best-
