Our May/June issue came off press last night, officially beginning our second year of publishing. I think champagne is in order. Or a facelift- launching a magazine isn't for the faint of heart.

We finished off our first year with subscribers in all 50 states, Puerto Rico, and DC, plus several foreign countries. Louisiana's unique culinary culture and heritage truly is world-renowned. We surveyed our print subscribers earlier this month, and were gratified to learn that 98% of them absolutely love the magazine.

Stories on our food culture are the most popular, followed closely by recipes from professional chefs; the photograply; and the history behind Louisiana's culinary heritage. The favorite department is On Our Plate: Fresh, Seasonal Ingredients, followed by Weenight: Fast, Easy Recipes; and Weekend, with more complex recipes and full menus. What they like least about the magazine is the fact that it's only published six times a year; my favorite quote is "Thanks from the bottom of my stomach!".

Gattuso's Fried Oyster Club Sandwich

This is a Louisiana twist on a classic club sandwich. Fry off some oysters to use in place of the more traditional sliced turkey, and mix equal parts mayonnaise and Creole mustard for the spread. Serve hot, so the cheese melts!

Crawfish and Corn Macque Choux

chose this recipe in honor of beginning our second year of publishing; it appeared in the Premiere issue of the magazine. Macque choux is a mix of French and Native American flavors, and always has corn, tomatoes, onions, and bell peppers. If it's to be served as an entree, add chicken, shrimp, or, as we do here, crawfish. And of course, butter and cream! As shown, it's served over fried eggplant.
