Susan Ford

It finally stopped raining and the temperatures have dropped some, much to the relief of our fellow Louisianans still without power almost 4 weeks after Ida came ashore as close to a category 5 hurricane. If you can, donate something, or send supplies to, the Cajun Navy. They are doing a world of good in the severely affected areas.

For the recipes this week, I turned to the archives. I've linked to both my go-to recipe for chicken and sausage gumbo, and my favorite red beans and rice, then rounded things out with a quick and easy shrimp and spaghetti dish that'll get dinner on the table in a hurry.

Enjoy the recipes below, stay safe and healthy, and, as always, let me know what's on your mind

Best regards,

Susan

Instant Pot Chicken and Sausage Gumbo

Instant Pot Chicken and Sausage Gumbo

With temperatures finally dropping into the 50s at night, gumbo pots are coming out all over Louisiana. I developed this recipe for the Instant Pot a few years ago, and it's a winner.

Susan's Red Beans and Rice

Susan's Red Beans and Rice

I've been making these red beans for years My friend Quin, a native New Orleanian, calls them Rich Man's Red Beans because they have such a variety of meat in them; if gumbo isn't your thing, put on a pot of these and enjoy the cooler weather.

Garlic Spaghetti with Shrimp

Garlic Spaghetti with Shrimp

This easy recipe comes together with very little effort, earning it an A+ for a weeknight recipe. You can get everything prepped while the water comes to a boil and the spaghetti cooks-- dinner on the table in under 30 minutes.
