February 20, 2014

Begging the pardon of readers still in the frozen tundra, spring is officially on the horizon here in Louisiana: we've had enough consecutive warm days the lizard population is venturing out to bask in the sun. I know because my bratty cat Mikey brought in and released his first lizard of the year earlier this week. He is a voracious lizard hunter but all he wants to do with them is play, which means that I'm now an accomplished lizard WRANGLER. I even manage to keep the shrieking to a minimum..

With any luck the crawfish will get the "spring is coming" message and begin to go forth and multiply, and grow. They're scarce so far this year, and expensive. I loved this picture that circulated on Facebook earlier this month. Since we're waiting on crawfish, enjoy the oyster recipes I've included below.

Earlier this week the James Beard Foundation announced semi-finalists for this year's awards, and, as usual, Louisiana is well-represented in several categories. Congratulations to everyone.

Mardi Gras parades start in earnest all over the state this weekend. If you're not familiar with parade routes in the city or town you find yourself in, take a minute to look them up; it's pretty frustrating to have your car stuck on the wrong side of a parade. Or to have to cross the river, turn around, and come back in order to get home... only twice have I done that.

You can find a comprehensive list of parades around the state here.

Mulate's Cajun Smoked Oysters

Mulate's Cajun Smoked Oysters

New Orleans isn't known to the outside world for its ethnic restaurants, but those of us who live here enjoy the variety the region has to offer. LK&C reader Ann Benoit has put together a collection of recipes celebrating the diversity; published by Pelican Publishing, New Orleans' Best Ethnic Recipes is available now. And yes, there is a collection of Cajun, Creole, and Soul recipes in the mix, like this one from Mulate's .

Emeril's Delmonico Oyster and Artichoke Soup

Emeril's Delmonico Oyster and Artichoke Soup

Don't let the long list of ingredients deter you -- first, it's not as complicated as it looks, second, the end result is so delicious it's worth every minute. Plus, once you get the artichokes on to cook, you've got 20 minutes to pull everything else together. Artichokes are just coming into season, so enjoy this one this weekend.

Baked Gulf Oysters with Country Ham and Cornbread

Baked Gulf Oysters with Country Ham and Cornbread Crumbs

This is a great dinner party appetizer, because it can be put together up to the point of baking several hours in advance and held in the refrigerator..
