Welcome to Louisiana Recipes

 

Congratulations to Chefs Keith and Nealy Frentz (LOLA Covington). 

They placed 2nd in the 9th annual Great American Seafood Cookoff this past weekend at the Louisiana Foodservice Expo, and will represent Louisiana Seafood to the world for the coming year. The winning dish will most likely show up on their menu, so check their website often. I got my fork into the leftovers and it was delicious.

Chef Gregory Goudet of Departure Restaurant & Lounge in Portland, OR took first place.

Congratulations are also in order for all six of the 4-H teams that participated in the Sunday 4-H cookoff. I had the pleasure of acting as one of the MCs for the competition and really enjoyed talking to all the students. Point Coupee, LA took first place, St. Martin, MS took second, and Oklahoma stunned the crowd by taking 3rd. Those students told me they'd never been to New Orleans before, nor had they ever been to a seafood market; they were thrilled to place in the competition.

​In my spare time this weekend (ha!) I walked the show floor looking for cool new gadgets. I came across the Cajun Rocket Pot just a few rows away from us, and we'll be exploring this further. Produced here in Louisiana by a small, start-up company, the pots come in many different sizes, and work over a gas burner. The bottom of the pots has multiple "spikes" about 1/2" long, and the engineer who came up with the concept says the design provides twice the surface area of a regular pot bottom. This means heat is distributed into what ever is in the pot twice as fast, reducing both cooking time and propane use. Take a look- this could do away with the old saying "A watched pot never boils."

​Believe it or not, later today we start photo shoots for our Holiday issue. This year has flown by; before you know it the Saints will have won the Super Bowl in their own home town.

Jyl is on recipe duty this week, and has provided a selection below that is perfect for a large gathering Friday night to watch the Saints play, or for one last summer weekend at the fish camp before back-to-school activities take over our lives.

Jyl Benson and Celestine "Tina" Dunbar, one of New Orleans' grande dames of soul food, are good friends who go way back and love to spend time in the kitchen, sharing the nuances each took from her respective upbringing in different parts of the city.

​This version includes chicken wings, smoked sausage, gizzards, and shrimp, but as Tina says, "feel free to include anything but the kitchen sink" in the pot.

Jyl's mother, Mary Elizabeth Steinlage Benson, was known as a terrible cook, a rare breed in a state where, at the least, serviceable culinary skills seem to come as a birthright. Having a vast culinary cannon is one thing but everyone needs at least one dish they can do well. This was hers.

You can never go wrong with excellent, crispy fried chicken. It is the eternal southern crowd pleaser. Frying takes a teeny bit of skill but the results are worth it. And the leftovers, should there be any, always disappear.

​Emeril's version presented here is seasoned with Emeril's Essence and Creole mustard, dredged in seasoned flour and an egg wash, and fried off to perfection.
