My sister Charlotte and niece Amelia visited for ten days; Ameilia has finished all but the internship portion of her culinary degree, so I put her to work. She prepped and cooked for a photo shoot last week, and did a great job. Those shoots are a tremendous amount of work, but a lot of fun at the same time. Volunteers (hard working ones, anyway, are always welcome!) They were in town for Amelia's half brother's wedding, and we used the visit as an excuse to pull together a family reunion, which we'd not done in five years. We had more than fifty people attend, spanning five generations. South Carolina, Mississippi, Louisiana, Texas, and California were all represented. These days, we stay in loose touch via a family group on Facebook, but it was still great to exchange real hugs. And the food! As I've mentioned before, I come from a long line of great Southern cooks. The table was full of all kinds of fresh summer vegetables, ham, fried chicken, roast beef, boiled shrimp, ribs, yeast rolls, corn bread, baked beans, jambalaya; alas, no chicken and dumplings. And of course desserts. Saturday, June 28: Kicking Cancer in the Gut: a Fundraiser for Chef Carl Shaubhut. Diagnosed with cancer earlier this year, local chefs are putting on an extravaganza to raise money for Carl's treatment. Click here for details. It's Father's Day weekend. Many restaurants offer specials for dads -- Zea Rotisserie & Grill (all locations) is going a step further, offering a free four-pack sampler of their hand crafted beer to all dads (each table must order at least two entrées to qualify). I know this because they sent me the sampler in advance; I'm enjoying a cold Zea Amer Lager as I write this. Lucky me! Enjoy this week's recipes, share them with family and friends, and, as always, let me know what's on your mind.

John Folse's Chicken and Sausage Jambalaya I made this last weekend and took it to our family reunion, where it was a big hit. I followed the method up to the point of adding the rice (except I forgot to add the mushrooms) the night before; Sunday I got up and finished the dish in just 40 minutes or so. The flavor of the finished dish depends very much on the flavor of the smoked sausage you choose, so give it some thought. |

Louisiana Seafood Salad From George Graham's popular blog Acadiana Table, this seafood salad recipe was a big hit when I first published it last summer -- so I thought a redo was in order. Boiled shrimp, jumbo lumb crab, crab claws, and crawfish tails turn this into a substantial meal. |

Creole Tomato, Bacon, Basil, and Brie While the big juicy delicious Creole tomatoes are in season, I ignore the calories and make this sandwich a few times. I prefer a sourdough bread, but use whatever is your favorite for your family. The key is to get the cheese nice and soft under the broiler before assembling the rest of the sandwich -- and I highly recommend having plenty of napkins on hand. Make it and let me know what you think! |
