Greetings from sunny Los Angeles. My friend (and LK&C contributor) Wendy Waren and I flew in yesterday and are staying with family in Redondo Beach. On Saturday, Louisiana's Lt. Governor Jay Dardenne is hosting a Jazz Brunch for all the Louisiana musicians nominated for Grammys this year; the awards ceremony is Sunday night. Good luck to all of them, and thanks to the Louisiana Office of Culture, Recreation, and Tourism for inviting us. My birthday was Tuesday and I was too busy getting things in order to take this trip to celebrate, so we fully intend to have a great time. The weather is beautiful, whales are migrating, and of course we'll eat some great food. Speaking of food, if you happened to catch Eat St. on the Cooking Channel last night, you saw yours truly. They featured our friends Keith and Nealy Frentz's food truck LOLA Deaux on the show and I was there for the video shoot. Keith and Nealy are the dynamic husband and wife team in the kitchen at the ever-popular LOLA in Covington, and drive the food truck around to farmers markets, festivals, and other fun spots in their spare time. Mardi Gras parades start to roll all over the state this weekend. While Louisiana may not be the birthplace of Mardi Gras, the state can lay claim to the fact that more Mardi Gras parades roll in this state than any other place in the world. We've put together a fairly comprehensive list of parades here; Drop us a note if you know of a parade that is NOT listed and we'll update. Baked Gulf Oysters with Country Ham This simple recipe combines oysters with braised greens, country ham, and cornbread crumbs, and is delicious. Should you not have access to in-the-shell oysters, buy a pint of shucked oysters for this recipe. You can bake them off in individual ramekins, or for a more unique presentation, take a look at the SOS Oyster Shell, a reusable stainless steel vessel perfect for baked oysters. |

Chef Paul Prudhomme's Beef Vegetable Soup Perfect for a cold winter night, this recipe is from "Chef Paul Prudhomme's Pure Magic" cookbook. Don't let the long ingredient list deter you; you get some of it on the stove and let it cook awhile, add some more ingredients and let it cook a while longer, then finish it up, so you can do your prep work in batches. Fried Crawfish Remoulade It's not quite crawfish season yet, but you can find Louisiana crawfish tails in the freezer section of many well-stocked grocery stores these days. Just make sure they're not imported! We've been shooting crawfish dishes for the next issue of the magazine, and I'm reminded of how much I love them. Give this one a try. |
