It is National Pecan Day! Actually, National Pecan Month, but today's the official day. Pecan trees can be found all along the lower Mississippi river valley(my grandmother had a small orchard) and are a big crop in Louisiana. It is said pecan crops were so bountiful, the early Spanish explorers used them as ballast in their ships, carrying our native fruit around the world. It is a staple in Southern cooking; where would we be without pralines, and pecan pie?? Our friends at the Cane River Pecan Company, headquartered in New Iberia, are celebrating the month by giving away a year's supply of pecans to one lucky winner; see the link below for more details. I'm putting the finishing touches on my May/June issue -- the first of my fifth year of publishing!
