Correct Placement of Pizza Stone
Submitted by adminLike to make home made pizza. If so, you know your oven simply doesn't get hot enough and the best way around this is using the hottest setting on your oven dial and a pizza stone. A pizza stone is designed to soak up radiating heat like a sponge. Now, most recipes call for placing the stone as low in your oven as possible (so it gets maximum exposure to the heating elements). But after testing (performed by Cook's Illustrated) the best position for the stone is as close to the top of your oven as possible. This will allow the toppings to cook and brown before the crust dries out. In other words everything will bake in sync producing a well browned pizza on top and bottom and slightly chewy pie.
