Native to Central Asia and China, buckwheat is neither a wheat or grain. It's a flower seed and a relative to rhubarb. It contains a compound that lowers blood glucose levels so good for diabetics. Kasha and Soba noodles contain buckwheat flour. A more familiar dish is buckwheat pancakes.
