Steamed Pork Ribs In Black Bean Sauce

Serves 4

Ingredients: 
  • 1 lb pork ribs, each 3 to 4-inches long
  • 2 tablespoons black beans, washed and slightly mashed with fork
  • 2 garlic cloves, chopped
  • 1/2 inch fresh ginger, finely chopped
  • 1 tablespoon oyster sauce
  • 2 teaspoons soy sauce
  • 2 teaspoons sugar
  • 1 tablespoon cornflour (cornstarch)
  • 1 green onion, cut into 1 inch lengths

Method: 

Put the short ribs in a shallow heatproof dish that will fit into a bamboo steamer. Combine the black beans, garlic, ginger, oyster sauce, soy sauce and sugar in a small bowl and mix well. Add this mixture to ribs and completely coat ribs, use your hands. Scatter green onions over the top.

Put the dish into the bamboo steamer and place steamer over a wok of boiling water. Steam covered for 20 minutes, replacing water as needed. During steaming the steam will create a sauce for the ribs. Serve hot with rice.

Note: Make sure the lid of your steamer is tight fitting as you need a lot of steam to help create the sauce. If necessary add 1 - 2 tablespoons of boiling water to sauce.
