Pecan Ice-Box Cookies

Dessert

Makes 3 dozen

Ingredients: 
  • 3 cups self-rising four plus more for dusting hands
  • 2 sticks salted butter
  • 1 cup Louisiana pecans
  • 1/2 teaspoon baking soda
  • 1 cup sugar
  • 1 cup light brown sugar
  • 1 egg
  •  2 tablespoons whole milk

 

 

 

RECIPE NAME 

 

Method: 

Mix all ingredients together thoroughly and divide into six equal parts. Flour hands then form each lump of dough into a roll about 8 inches long. Wrap each roll in wax paper and place in freezer. Freeze for at least 1 hour.

Preheat oven to 300°F.

Remove 1 roll from freezer, remove wax paper and slice each roll as thinly as possible. Return roll to freezer if it becomes too warm and soft, then proceed.  Place slices on an ungreased cookie shoot and bake until just slightly golden around the edges, about 6 minutes.  Repeat with remaining rolls of dough.
